Protein Pancakes for those days when you want something special & sweet for breakfast that’s still healthy and nutritious.

N.B. If you have specific macro goals you may need to adjust the quantities to better suit your targets (or play around with the . For example:

  • Use a larger banana in the pancake batter itself
  • Opt for the Berries & Coconut milk as your topping for higher carbs/fat

And if you are tracking, make sure you include any adjustments/additional ingredients/cooking oil used when logging your meal in MyFitnessPal (or wherever you track your food)

Ingredients
Pancakes
  • 100 g Banana
  • 30 g Protein Powder
  • 5 mL Baking Powder
  • 3 mL Baking Soda
  • 125 mL Egg Whites
  • 60 mL Almond Milk, Unsweetened
Berries & Coconut Milk *Optional Topping*
  • 75 g Berries, Fresh or Frozen
  • 62.5 mL Coconut Milk
Chocolate-Peanut Sauce *Optional Topping*
  • 18 g Just Great Stuff or PB2
  • 40 mL Water

Pancakes
  1. Combine banana, eggs, protein powder, baking powder and baking soda in magic bullet (or something similar) and blend until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour the batter onto the griddle, and cook until small bubbles appear and pancakes have lost their "shine". Flip pancakes and cook for 1min on the other side, before removing gently from pan.
  3. Continue until batter is gone & enjoy while warm with your favourite topping(s)
Toppings *Optional*
  1. Berries & Coconut Milk - Defrost Berries (if frozen) and blend together with coconut milk. Pour over pancakes and enjoy.
  2. Chocolate-Peanut Sauce - Add ~30-45mL of water to powdered peanut butter (enough for a sauce-like consistency). Drizzle over pancakes & enjoy
